What is Einkorn wheat?

Einkorn is the only wheat never hybridized. It is known as the earth’s “original wheat” and is believed to be the wheat used in Bible times. Einkorn wheat is a good source of protein, iron, fiber, minerals, and B vitamin.

How to substitute einkorn flour for all-purpose flour in baking

When substituting einkorn flour for all-purpose flour, simply use 1/4 cup more of einkorn for every 1 cup of all purpose. Just a note, the texture and behavior of einkorn flour is very different than all-purpose, so don’t be surprised if the dough is sticky and more dense.

Einkorn Sandwich Bread

A delicious and fluffy einkorn sandwich bread, packed with nutrients!
Prep Time 1 hour 15 minutes
Cook Time 45 minutes

Ingredients
  

  • 3 c warm water
  • 3/4 Tbsp salt
  • 1/2 Tbsp yeast
  • 1/4 cup honey
  • 8-9 c einkorn flour, freshly milled or all-purpose *see notes

Method
 

  1. Place all ingredients in stand-up mixer. Make sure the water is warm, but not hot.
  2. Attach dough hook. Mix on medium-low speed, until the bowl comes clean from the sides. (Start with 8 cups of flour and add 1/4 more at a time until this happens).
  3. Preheat oven to 350. Grease and flour 2 loaf pans and set aside.
  4. Flour counter surface and scoop the dough out onto the counter. (It's totally normal if it's sticky! Just keep flouring your hands)
  5. Divide dough into 2 equal parts. Shape into loaves and gently place in the prepared bans.
  6. Bake at 350 for 35-45 minutes until golden brown and a toothpick comes clean. (Check at 35 minutes, as every oven is different!)
  7. Let cool some, then carefully remove from the pans. Enjoy!

Notes

This recipe can be made with “all-purpose einkorn flour” or freshly milled einkorn flour, milled from wheat berries. If using freshly milled, just know that the loaf will be more dense and less fluffy than using all-purpose. (On a plus side, more nutritious!) My favorite combination for this recipe is half all-purpose einkorn flour and half freshly milled, for the best of both worlds. 
This bread freezes beautifully. Place in a freezer gallon bag, sliced or unsliced, and it will keep great for 3 months.
